Kefir is a sour drink, milk or water based, obtained by the fermentation of lactic acid bacteria. Kefir has been used for thousands of years by the inhabitants of the regions of the Caucasus. In the early 1900s a Russian scientist Ilya Metchnikoff, Nobel Prize for Medicine in 1908, attributed the longevity of the rural population of the Caucasus to a diet which is based mainly on the consumption of Kefir (from the Arabic word kif and turkish keif: meaning well-being). Metchnikoff, at that time a professor at the Pasteur institute of Paris, (Institut Pasteur) developed the theory that the aging process was linked to the activity of proteolytic microbes. These form part of the normal human intestinal microbiota producing toxic substances (such as phenols, indoles, and ammonia) by means of digestion of proteins and are responsible for what he called “intestinal auto-intoxication.” In that the lactic acid bacteria inhibit the growth of proteolytic bacteria, Metchnikoff recommended that it should be introduced in the daily diet, for health benefits.
